The Humbling Telepathic Card Trick

You'll need to be chatting when you pick up the specific stack, and turn it over in your hands a couple times to keep their attention off which side of the stack you pull the cards from. This trick always amazes them, and will win over any skeptic beyond a shadow of a doubt of your psychic projection abilities. Have fun.
